Playing Catch Up

Whew, what a weekend!  We went away to Pittsburgh for a wedding on Saturday, and I didn’t have internet where we stayed, so no posting yesterday.  But I have lots to tell!! 

First, the wedding.  It was beautiful!!  They did a winter wonderland theme- and this was one gorgeous wedding.  We laughed, we ate, we danced- it was wonderful!  It was the first wedding we’ve attending since our own, and it brought such beautiful, wonderful memories to mind!  The couple is absolutely adorable, too- and I was so excited to be a part of it!  As far as the diet goes, I drank a little more wine than usual, and yes, I ate the tiniest slice of cake, but I managed otherwise to stick to the SD pretty well.  Otherwise, breakfast and lunch came straight off the diet, and dinner was salad, salmon, and asparagus- not too bad!  We’ll see what the damage is tomorrow.  We had the best time- and it was worth it.  The cake was fabulous- an almond cake with raspberry buttercream filling- divine!!!  And I wanted a cheeseburger today- so we punched the pig, and the craving passed, and we’ve saved close to $200 this month by punching the pig instead of giving into our cravings!  We’re back to the diet today, and I have to say, I physically felt better after I ate some eggs, fruit, and cheese, and whole grains today.  I actually love this diet!

Dinner tonight was fabulous- grilled pork with grilled peach salsa! I really loved how the sweetness of the peaches paired with the spicy/saltiness of the pork!

Grilled Pork with Grilled Peach Salsa
1/4 tsp. paprika
1 clove of garlic
juice from 1/2 lemon
salt & pepper
splash white wine vinegar
2-4 thick cut pork chops

Combine all of the above ingredients & let the pork sit while you grill the peaches.

2 peaches, skinned and sliced
1 Tbsp. Olive Oil
1 Tbsp. White Wine Vinegar
1/2 tsp. shallots
salt & pepper
2-3 tomatoes

Combine the peaches, oil, vinegar, shallots, salt, and pepper; with tongs, put each slice of peach on the grill over med-high heat.  Grill on each side until grill marks appear, and take them off the grill (you don’t really wanna cook them all the way through).  Slide the pork onto the grill, turn it down to medium, and grill on each side, flipping every 5-8 minutes, until fully cooked all the way through (this will vary based on the thickness of the chop).  While the pork is grilling, chop the peaches, and chop the tomatoes; place them back in the bowl with the oil & vinegar mixture.  When pork is done, spoon the salsa over the pork & enjoy!

Bonus: with the leftovers, we are having grilled pork tacos with grilled peach salsa tomorrow for lunchies!  🙂 

My progress was very little last week.  With the cherries messing me up, I broke even at 9 pounds by yesterday.  I’m just relieved I broke even!  Here’s to a new week, even though I had a little cake yesterday, making more progress!  I have to just look forward to the progress this week holds- I refuse to let myself drown in guilt over the cherries from last week!  I have a whole year to make it the other 11 pounds I want to lose!  But really, even more than just numbers on a scale, I am just enjoying the adventure of finding the best health of my life, trying new foods, and fabulous new favorite recipes!

  1. If you weren't already doing your doctor thing? I would totally suggest being a motivational speaker. Or a counselor. You are so dang encouraging!! Chris is lucky to have a wife who obviously knows how to build herself (and others!) up. You make me smile, dear. =D
