Key Lime Pie!!!

Whew!  Got lots of cleaning done today- not an easy process!  It is kinda hard for certain husbands…who shall remain unnamed…to let things go.  So, we had to make things a little better today for all involved in the cleaning process.  We made a key lime pie…with a Biscoff crust!!!

Hubby crushed up the cookies

Whipped in a little butter, and pressed it into a crust:

Meanwhile, I made the custard filling.  Which, by the way, made me realize that I’ve never made a custard pie before!!! How did this happen?!?

So, we started with 1 whole egg whipped together with 4 eggs yolks until light in color:

Then, mix in a whole 14 oz. can of sweetened condensed milk and 1/2 tsp of lime zest:

Then stir in 1/2 c. sour cream, 1/4 c. sugar, and 1/2 c. lime juice.
Pour it in the crust and bake at 350 for 20 minutes!

It looks about the same after baking, sort of shiny:  Let cool for 45 minutes at room temperature, and then chill in the refrigerator at least 3 hours.  Its better colder.  Trust.

I prefer a whipped cream topping to a meringue topping (although I’ve never met a pie I didn’t like).  Then, with your mixer on high, whip 3/4 c. heavy whipping cream and 1/4 c. sugar together for homemade whipped cream:

Then, I piped on the fresh whipped cream over the pie:

MMmmmmmmmhmmmmm.  The world is all better again!!!!  Wish you were here to savor a slice with us!
