Raisin Bran Muffins

I love/hate Sundays.  I love them because they are the 2nd day off in a row & I can really relax on Sunday morning, but it’s also the day before I have to start another work week; it’s tainted.  I usually battle this by sleeping in, getting an afternoon nap, and making a fabulous Sunday Brunch.  It’s been our tradition for years! 

Today for Sunday Brunch I made some Raisin Bran Muffins.  They are actually not made from Raisin Bran Cereal, but Bran Cereal (you add raisins in later).  They were light, fluffy, delicious, and nutritious! 

Raisin Bran Muffins
1 1/4 c. Bran Cereal (like All Bran or Fiber One)
1/3 c. yogurt
3 Tbsp. Applesauce
2 Tbsp. Brown Sugar
1 1/2 Tbsp. Molasses
1 egg
1 c. all purpose wheat flour
1/2 c. stone ground wheat flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. raisins

Preheat oven to 400 degrees.  Take 1/2 of the bran cereal & pulse in a food processor until a fine powder, about 1 minute.  Add it into a large bowl with the other half of the whole bran cereal.  Add the yogurt, applesauce, brown sugar, molasses, and egg into the cereal & stir well.  Add in the flours, baking powder, and salt; fold in until just combined.  Fold in raisins.  Spoon the batter into 6 muffin cups & pile it high (the muffins don’t rise much & the batter should be stiff enough to pile without a mess).  Bake for 20 minutes, turning halfway through.  Let them cool for 5 minutes before removing from cups.  Cool 10 more minutes before eating!

They are really good with fresh preserves or even just honey!  <3 

On another note, I have no idea if I’ve mentioned it already or not- but work is much, much better for me.  I am on Internal Medicine this month, so I don’t have to take neuro call with that attending for the month of March.  It’s a much needed break for me.  I am finally starting to gain a little bit of my confidence back at work, but it hasn’t been easy.  I am studying for my 3rd and final licensing board right now, too, so I am feeling refreshed on all of that knowledge from med school.  I am closing in on my first year of residency, and it’s been such a whirlwind!  I can’t believe it’s almost over!  Chris will start work in about 1 month, and things will be so different in good and tough ways.  I have been so spoiled to be able to come home from work at any given point, and Chris is here for me.  I have been on call, but he has always been right here at home for me.  Now, he will start taking calls, there will be a lot less time to see each other.  On the upside, we’ll get 2 paychecks (A much needed boost!).  Oh well…time marches on…sometimes I wish for the easier days….
