Woof!

Woof.  Rough day.  Woke up, didn’t take Sassy out fast enough and ended up with number1 and 2 all over the floor.  Minor fight with the hubby.  Late for work–salad dressing ended up all INSIDE my bag.  40 minutes late for a 4 hour conference I didn’t have in my calendar for some reason.  Home. 

Then, things looked up.  Made up with the hubby, great nap, made an AWESOME dinner, worked out for an hour, and sipping tea while it’s snowing buckets outside <3  Much. Better.

Dinner was a roasted chicken with lemon, tomato, and feta couscous and roasted acorn squash with carrots.  Yummy!  I made it just like my Roasted Cornish Game Hens with Sun-Dried Tomato Quinoa/Couscous- and it was such a hit!  The leftover bones and roasted veggies are going to be roasted again and thrown into a pot with water and made into roasted homemade chicken stock–I’ll keep you posted on how that turns out.  It was a tip from Anthony Bourdain’s audiobook, “No Reservations.”  He also said to freeze it in bags so you can have it on hand anytime you need chicken stock, which I think is a fabulous idea.

I did 20 minutes of yoga this evening, which never really feels like a workout.  After it was over, I just sat and meditated for 10 minutes or so, and I think it made a huge difference in decreasing my stress level.  By Thursday, it’s usually been a long week and I’m ready for that weekend!  Can’t wait to try my new yoga clothes this weekend!

  1. I always save leftover stock in ziploc bags so that I can use them later. You can also get ice cube trays for smaller portions! I have trays with lids that I used to make baby food that work well for that, and then the stock doesn't freeze in that weird bag shape.

    I think quiet time is important. Levi and I have started a new devotional this year, and we are really enjoying it. It brings us closer together AND closer to God. Bonus!
