Spring has (finally) Sprung!

Spring springs later up here than anywhere else I’ve ever lived before.  The trees are flowering, the sun is shining, it’s warm!  Fruits and veggies are starting to come into season, and that makes it the perfect time for a fruit tart!

I actually had never made one before, but this one is just fabulous and super, super easy!

Fruit Tart


Crust:
1 1/2 c. almond or oat flour
4 Tbsp. melted butter
pinch salt
1/4 c. maple syrup
1 tsp. almond flavoring

Filling:
1 small box of pistachio pudding (I used sugar free, fat free)
1 c. greek yogurt (unflavored)
1 c. milk

Topping:
1 c. blueberries
1 c. strawberries
1 c. raspberries
*I used frozen berries we picked last summer, because berries haven’t come in quite yet here!

Preheat oven to 350 degrees F, and in a large bowl, mix all of the ingredients for the crust with a fork.  Press into a tart pan.  Bake for 15 minutes, and then cool until room temperature.

Mix all of the ingredients for filling in a medium bowl and pour into cooled crust.  Arrange fruit on top of the filling; chill for at least an hour.  Cut & serve!

So, it was delicious.  You could totally vary this recipe by using different puddings and different fruits (i.e., lemon pudding with strawberries, or cheesecake pudding with blueberries, etc.); your imagination is the limit!!

In other news, Hubby and I have been attempting a massive redecoration project/ spring clean-up of our house.  However, on our budget, this hasn’t been easy.  So we have been scouring the yard sales/antique shops, etc for bargain finds that we can redo on a budget.  We have several amazing finds, and I’m somewhere in the middle of each project, so no pics to show off quite yet…but I’m getting pretty close!!  I can’t wait to show you all of my hard work!
