Snowy Sundays with Soup

I. Love. Sundays.  Lazy, wonderful Sundays.  This weekend has been soooo relaxing- just what I needed before gearing up for another crazy week!  We made the most delicious soup tonight with the roasted chicken stock, and I’ve just GOT to rave about these recipes!!

Chicken Chili Verde
6-10 tomatillios
1 poblano pepper
1 chicken breast
1 medium onion
1 clove garlic
oregano
cilantro
chicken stock (see recipe below or store bought)
red pepper flakes
2 cans of cannellini beans
1 bunch of chard

Start by roasting 6-10 tomatillios (those green tomatoes in the grocer…I have been wanting to try those for AGES), 1 poblano pepper, and 1 chicken breast (I used frozen) in the oven until the tomatillios and peppers are blistered and the chicken is roasted. After it cools, toss the tomatillios and pepper (deseeded) in the blender and blend until smooth.

In a med-large saucepan, add a tablespoon of EVOO and a medium onion, chopped; saute over med heat for 5 minutes.  Add a chopped garlic clove, 1/2 tsp oregano, and the tomatillio salsa into the saucepan & cook until thickened.  Add 4-5 cups of chicken stock (homemade recipe below), 1/2 tsp cilantro, 1/4 tsp red pepper flakes, and 2 cans of cannellini beans (undrained); bring to boil and simmer 10 minutes.

While simmering, shred the roasted chicken.  Add the chicken and chard; simmer another 10 minutes; season with salt & pepper to taste.  Love!  <3

Homemade Roasted Chicken Stock
Chicken Bones
1 red pepper, halved
1 med onion, halved
2 c. carrots
zuchhini, sliced into 1 inch slices
yellow squash, sliced into 1 inch slices.
any other leftover veggies, sliced or left whole

Brush a roasting pan with 1 tablespoon of olive oil; throw all of the veggies and bones onto the pan.  Roast at 400 degrees F for 1-2 hours.  Place all of the veggies and bones into the largest pot you have and fill with water.  Bring to a boil and simmer for several hours.  Let it reduce by 1/3, add back the volume of water it lost and let simmer for 1-2 hours.  Done!

*You can let it cool and freeze it for future use; this is what I am doing!  It is so much better than store bought and cheaper, too!

I am going to use these recipes FOREVER- The Hubby & I agree that it would be awesome even if were weren’t on the SD.  It would also be awesome with cornbread on the side and corn chips, sour cream, and cheese on top!!

Day 9- Loving it, still.  I think this diet might be tough for those who hate to cook, but for a foodie like me, I am in HEAVEN.  I feel like I am expanding my repertoire of foods and culinary techniques, trying new ingredients, and best of all, getting out of my own cooking rut (I didn’t even realize I was in one!).  Day 9, and I feel better than EVER, lost 7 1/2 pounds, and tomorrow is the last day of Wave 1!  On Tuesday, I can finally enjoy a long-deserved glass of wine!!! Yay!
