Seafood Cioppino en Papillote

I have no idea if I’ve spelled the title of this dish correctly.  But this dish was easy and tasty!  It is another oven dish, but I made it successfully in my toaster oven (so I didn’t heat up the house)!  And, best of all- it’s a great weeknight recipe because there are very few dishes involved!

Seafood Cioppino en Papillote
4 servings

1 lb. of mixed seafood (shrimp, scallops, calamari, whatever you like!)
1 large zucchini
1 can of roasted tomatoes
1 bell pepper, cubed
2 cloves of garlic, minced
1/2 medium onion, diced
basil, thyme, salt, and pepper, for seasoning

Take 2 peices of parchment paper per serving and lay them perpendicular to each other, so that they form an “X”.  In the center of each “X,” layer all of the above ingredients evenly between the servings.  Season as desired.  Close the parchment paper around the ingredients, rolling it so that it forms a little packet for each person.  (you’ll see what I mean from the pictures).

Heat toaster oven to 400 degrees and bake for 30 minutes or so (watch that it doesn’t burn).  It will be steaming, but that’s ok.

Gosh, you can see how dirty my toaster oven is.  That’s embarrassing.

Anyway, after they’ve baked, they will look like this:

 And you can open it right up and eat it out of the parchment.  Kinda fancy, too!  And no pots or pans 🙂

I wish you could smell this- so fabulous with the garlic and basil.  Really made the house smell wonderful, and I managed to get some laundry in the wash and the trash out while it cooked.  Huge win for a Tuesday night!!

On another note, I recently had a patient’s family send me a willow tree angel at work for the patience and kindness I apparently showed them!  I was so stunned- it really made my Monday a lot, lot easier (even on call!!).  Maybe it does make a difference…having people skills…just maybe!
