Going Whole Hog

I was on call last night, that’s why I did not post yesterday.  It was a busy night, I only slept for four hours, and it was broken into 2 hours at a time.  However, we did enjoy Sonoma Granola yesterday, which I will have to gush about in another post!

Day 14: You know what I love?  Fried pork chops.  Never thought it would actually be on any diet plan I was on, though- alas, the sonoma diet wins again!!!

Oven Fried Pork Chops
4 Pork Chops, boneless
salt & pepper
1 egg white, whipped until frothy
1/4 c. buttermilk
1 1/2 tbsp coarse ground mustard
1 1/2 tbsp hot sauce (I used Frank’s)
2 c. whole wheat bread crumbs
1/3 c. parmesan (the cheap kind that’s all grainy is best)
1/2 tsp. cayenne pepper
salt & pepper

Sprinkle the pork chops with salt & pepper; set aside.  In a medium bowl, whip the egg white with a little salt until frothy, add buttermilk, mustard, and hot sauce & combine.  Add the pork into the bowl to marinate for at least 15 minutes.  In a gallon-size Zip-lock bag, combine bread crumbs, parmesan, cayenne, and salt & pepper.  After the pork has marinated for 15 minutes or so, place one at a time in the crumb topping and coat evenly; place on a wire rack layered on top of a baking sheet (this helps the heat to circulate around the pork evenly & results in crispier crumbs).  Bake at 400 F for 40-45 minutes; enjoy!!

Again, we loved this recipe so much- it would have been a non-diet favorite!  Absolutely flavorful & juicy- a huge hit!  We’ve officially been on the Sonoma Diet for 2 weeks, and (obviously) we’re loving it!  We were grocery shopping post-call today, and I looked in our grocery cart- it’s had a major makeover in the last 2 weeks!  We’ve changed to all whole grains, lots of fruits and veggies, and no sugary sweet things.  Amazing!  Also, since it’s been 2 weeks- it’s reward time again!!  I went to Victoria’s Secret, for the last 3 days of their Semi-Annual Sale and picked up some truly precious pink & white striped flannel jammies for $13 (turns out everything on sale was an additional 50% off!!!)!  What a great way to reward myself!!  I’m actually making it- and losing weight, something I thought impossible after 3 years of surreptitious weight gain!!! If I keep it up, I have a hair appointment in Pittsburgh for my one month reward!!!

  1. I'm looking forward to hearing which whole grain options are your favorites! Levi and I are a little scared of the whole grain options…especially the pastas…but we're lucky to have you and your hubs to be our guinea pigs. =)
